Grape Variety: 100% Dolcetto of the red stalk
variety.
Colour: intense ruby red colour when young,
with violet and garnet tints with ageing.
Bouquet: vinous, fruity, pleasant and very
characteristic.
Taste: dry, velvety, and sometimes bitter,
with moderate acidity, with a good balanced body.
Yield: 90 quintal per hectare.
Maximum yield of grapes: 70%.
Alcohol content: 13% vol.
Minimum total acidity:5,5 – 6 gr. per thousand.
Production area: Cossano Belbo, Treiso, Rocchetta
Belbo.
Ageing:3 months in oak barrels and 3 months
in the bottle. It has a potential ageing in the bottle of any years; with ageing
it becomes ethereal, fine and well-balanced, with an important elegant structure.
Optimal serving temperature: 18° – 20° C.
Storage: it is better to keep the bottle horizontal,
away from the lights with a temperature of 10° – 14° C and away from temperature
leaps.
Food pairing: starters, first courses, roasts, stews, grilled meat and cheese.
